The Sambucus nigra is a favorite among those of the English countryside where this fast growing shrub is often seen growing along fencerows, ditches, and stream banks. The plant’s hollow, young branches were used as a pipe for blowing a fire, hence its name elder derived from the Anglo-Saxon term Æld meaning “fire” (the shrub is also known as the Pipe Tree). The plant grows 9 to 30 feet tall and prefers moist soil. Its dark green, finely serrated leaflets are oval and taper at their tips. The Sambucus nigra produces masses of creamy-white, fragrant blossoms in June and July, and its branches are heavy with purplish black berries by September. Its berries are relished by humans, animals, and birds.

The flavonoids (up to 3%) composed mainly of flavonol glycosides (astragalin, hyperoside, isoquercitrin, and rutin up to 1.9%) and free aglycones (quercetin and kaempferol); minerals (8%–9%), mainly Potassium; phenolic compounds (approx. 3% chlorogenic acid); triterpenes (approx. 1%), including a- and b-amyrin; triterpene acids (approximately 0.85% ursolic and oleanolic acids); sterols (approx. 0.11%); volatile oils (0.03–0.3%) composed of approx. 66% free fatty acids (linoleic, linolenic, and palmitic acids) and approximately 7% alkenes; mucilage; pectin; plastocynin (protein).
